So what is imitation crab made of? Imitation crab is made of surimi — deboned white fish flesh that has been washed, refined and blended into a firm protein paste — combined with starch, egg white, sugar, salt, vegetable oil, crab flavouring and a thin layer of food-grade colour on the outside. There is no crab meat in standard imitation crab, and the fish behind it is almost always a mild white species such as Alaska pollock or a tropical equivalent.
That is the short answer. The longer answer is more interesting, because the ingredient list on the back of a pack tells you very little about why one imitation crab stick snaps cleanly and another turns pasty in the mouth. We manufacture surimi products in Samut Sakhon, Thailand and have done so since 1994, so the notes below come from the production floor rather than from a recipe site.
What exactly is surimi?
Short answer: surimi is not an ingredient you buy in one piece — it is a process. White fish is minced, washed repeatedly in cold water until almost everything except the myofibrillar protein is gone, then stabilised so it can be frozen and shipped.
The washing step is the part most explanations skip, and it is the step that defines the product. Rinsing removes fat, blood, enzymes and water-soluble proteins, which is what strips out the “fishy” flavour and leaves a neutral protein concentrate. What remains is a gel-forming protein: when it is later mixed with salt and heated, it sets into an elastic solid rather than a soft mush.
That elasticity — the industry calls it gel strength — is the single most important quality variable in the entire category. It is why two products with identical ingredient lists can feel completely different to eat.

What is in imitation crab besides fish?
Short answer: starch for structure, egg white for whiteness and bite, sugar and salt for flavour and protein stability, vegetable oil for mouthfeel, crab or shellfish flavouring, and a paprika-based or carmine-based colour applied to the surface only.
The proportions vary widely between markets, and that variation is deliberate rather than sloppy. A product built for the Japanese market is typically higher in fish protein and firmer; a product built for a price-driven retail market carries more starch. Neither is wrong — they are answers to different briefs.
- Fish protein (surimi) — the backbone. Higher percentages give a springier, more expensive product.
- Starch (wheat, tapioca or potato) — cheapens the formula and softens the bite. Tapioca behaves differently from wheat in freeze-thaw cycles, which matters if the product will be frozen twice.
- Egg white — improves whiteness and adds firmness. Formulas made for vegan-adjacent or egg-free markets replace it, usually at the cost of some bite.
- Vegetable oil — carries flavour and stops the surface drying out.
- Sugar and salt — sugar is partly there as a cryoprotectant, not only for taste. Salt is what allows the protein to dissolve and then gel.
- Flavouring — may be crab extract, or entirely non-shellfish. This distinction matters enormously for allergen labelling.
- Colour — the orange-red stripe is applied to the outside of the sheet before it is rolled, which is why the colour never runs all the way through a genuine stick.
Does imitation crab contain real crab or shellfish?
Short answer: usually no crab meat at all, but some formulas use crab or shellfish-derived flavouring, so a shellfish allergy is not automatically safe. Read the allergen declaration, not the product name.
This is the question we are asked most often by importers, because the answer changes the label they are legally required to print. In practice there are three formulations in the market:
- Fish protein plus purely synthetic flavour — contains fish, no shellfish.
- Fish protein plus crab extract — contains fish and crustacean.
- Fish protein plus shellfish-derived flavour compounds other than crab — still a crustacean or mollusc declaration in most jurisdictions.
For a brand owner sourcing OEM production, this is worth deciding at the brief stage rather than the label stage. Changing the flavour system after the artwork is approved is one of the more common and avoidable delays we see.
What fish is used, and does the species change the product?
Short answer: mild, white, low-fat species. Alaska pollock is the global benchmark, and tropical species such as threadfin bream and lizardfish are widely used in Southeast Asian production. Species changes gel strength, colour and cost — it is not a cosmetic choice.
Cold-water pollock produces a very white, high-gel surimi and sets the reference standard. Tropical surimi, produced closer to the fishing grounds in Southeast Asia, has different gel and colour characteristics and is often blended rather than used alone. A manufacturer choosing between them is trading whiteness and elasticity against cost and supply stability.
For anyone comparing suppliers: asking which species and which surimi grade a factory works with tells you far more about the product you will receive than asking for a price per carton.
Is imitation crab actually bad for you?
Short answer: it is a moderate-protein, low-fat processed food that is higher in sodium and carbohydrate than real crab, and lower in omega-3 and micronutrients. It is not dangerous; it is simply a different food from the one it imitates.
Two honest caveats worth stating plainly. First, the starch content means it is not a low-carbohydrate food, which surprises people who assume “seafood” implies “low carb”. Second, sodium is meaningfully higher than fresh fish because salt is functionally required for the protein to gel — it cannot simply be removed without changing the product into something else.
What it does offer is a shelf-stable, affordable, consistently textured protein that does not require the consumer to handle raw seafood. That is a legitimate reason for its popularity across Asia, and there is no need to oversell it beyond that.
How should imitation crab be stored?
Short answer: keep it refrigerated and sealed; once opened, use it within a few days. It can be frozen, but freezing changes the texture — expect a slightly softer, more watery bite after thawing.
The reason freezing degrades texture is the same reason cryoprotectants exist. Ice crystals disrupt the protein gel that was so carefully built during production. Commercial frozen surimi products are formulated and frozen under controlled conditions to survive this; a pack refrozen in a domestic freezer is not.
Frequently asked questions
Is imitation crab already cooked?
Yes. The paste is heat-set during manufacture, so the product is ready to eat straight from the pack unless a specific brand states otherwise.
Is imitation crab gluten free?
Not reliably. Wheat starch is a common structural ingredient. Gluten-free versions exist and use tapioca or potato starch instead, but this must be verified per product, not assumed.
Is imitation crab halal?
It depends entirely on the manufacturer. Fish is not the issue — the risk points are alcohol-containing flavourings, non-halal processing aids and shared production lines. A certified facility is the only meaningful assurance.
Why is it called surimi in some countries and imitation crab in others?
Surimi is the raw protein paste; imitation crab is one product made from it. Fish balls, chikuwa, fish chips and squid sheets are others. In Japan the word for the general category is well understood; in Western markets the crab-shaped product became the reference point.
Can imitation crab be made without egg?
Yes, though it usually gives up some firmness and whiteness. This is a formulation decision, and a capable manufacturer should be able to present both options at sampling stage.
